500 grams tomatoes
1 small onion
2 cloves garlic
1 tablespoon oil
1/4 teaspoon paprika
1 teaspoon chilli, finely chopped
50g raw sugar
3 tablespoons cider vinegar
1 teaspoon coriander seed
Thinly slice onion. Fry gently in oil until tender.
Meanwhile skin tomatoes and chop into medium-sized pieces. Finely chop garlic. Add with tomatoes, paprika, chilli, sugar and vinegar to onion. Stir well.
With pan uncovered, bring to simmering point. Slightly bruise or crush coriander. Wrap in muslin cloth secured with white cotton. Add to pan.
Continue to simmer, stirring frequently, until sufficiently think - approx. 1 hour.
Remove and discard coriander. Place in a sterilised jar.
